Cranberry, Apple & Clove Crisp

One of my favorite fall flavors is cranberry, and I especially love adding cloves and citrus to anything baked with cranberries.  This dessert is perfect for Thanksgiving, or anytime during the brisk months of fall in the Midwest, combining fresh apples with tart cranberries and a pop of fresh citrus.  You can use pears in place of the apples, too!  The cloves add warmth and comfort and your kitchen will smell like you're making fresh cranberry sauce while this dessert is baking in the oven.

What I Used:
For the Filling
3 or 4 baking apples (Granny Smith or Honey Crisp), unpeeled & chopped
2 c. fresh or frozen cranberries
6 tbls sugar
1/2 tsp ground cloves (more to taste)
1/2 tsp ground cinnamon
pinch of ground ginger
3 tbls fresh orange juice
Zest of one orange

For the Topping:  

1 cup Happy Girl Granola 
½ cup brown sugar 
6 tablespoons flour 
pinch of Kosher salt 
1 stick (1/2 cup) unsalted butter, cold, cut into small pieces

Pre-Heat oven to 350 degrees.  For the filling, mix fruit with sugar, spices, and zest and orange juice.  Place filling mixture in 13x9 inch baking dish.  In the same bowl, mix topping ingredients with spoon and add in chopped butter and combine with hands until fully incorporated and small pieces emerge. 

Top the filling mixture with topping mixture and bake for 40-45 minutes, or until edges are bubbling.  Cool slightly before serving, and serve with a scoop of vanilla ice cream.
