Pumpkin & Chocolate Chip Baked Oatmeal Bars

These bars are quickly becoming one of my favorite things to bake this time of year and they're a healthier dessert option or the perfect quick breakfast.  I used pumpkin pie spice granola in this recipe, but you can use any flavor you love.
Ingredients:
2 cups granola (or rolled oats)
2 teas. pumpkin pie spice
1 teas. cinnamon 
2 tbls ground flax seed
1 teas. baking powder
1/4 teas. Kosher salt
1 cup pumpkin puree 
1 1/4 cup milk
1/3 cup maple syrup  
2 large eggs 
2 teas. vanilla
1/2 bag semi-sweet chocolate chips or chunks
Directions:
Preheat oven to 375 degrees.  Grease a 13x9 inch or 8x8 inch baking dish (I prefer the 8x8 pan because it makes the bars thicker and denser and easier to eat).  Mix granola, pumpkin pie spice, cinnamon, flax seed, baking powder and salt in a medium sized bowl and set aside.  In a larger bowl add eggs and lightly whisk, then add the pumpkin, maple syrup, vanilla and lastly the milk (slowly pour the milk in while gently whisking to prevent splatter).  Stir in dry granola mixture and chocolate chips.  Pour into prepared baking dish (mixture will be thin) and bake for 30-35 minutes or until the center is set.  Allow to cool completely before cutting into squares.  Store in the refrigerator for one week and enjoy for a full week.
